I need a good recipe for a picnic for two by the river. Somthing not to fancy please.?

I want to take my fiance on a romantic picnic when he comes home on leave. Please helpI need a good recipe for a picnic for two by the river. Somthing not to fancy please.?
I think that some cheese, crackers, fruit, and a beverage would be very nice. If you wanted to go more traditional, you could have fried chicken, potato salad, and some fruit.I need a good recipe for a picnic for two by the river. Somthing not to fancy please.?
Angel's Chunky Chicken Salad


* 1 cooked, boneless chicken breast half, chopped


* 2 stalks celery, chopped


* 3 tablespoons mayonnaise


* 1/2 onion, finely diced


* 2 dill pickles, chopped


* 1/4 teaspoon garlic powder


* salt and pepper to taste


1. Combine the chicken, celery, mayonnaise, onion and pickle; mix well.


2. Season with the garlic powder, salt and pepper. Serve with lettuce on fresh crusty bread or bun.

California Grilled Veggie Sandwich


* 2 tablespoons mayonnaise


* 1-1/2 cloves garlic, minced


* 1-1/2 teaspoons lemon juice


* 1 tablespoon olive oil


* 1/2 cup sliced red bell peppers


* 1/2 small zucchini, sliced


* 1/2 red onion, sliced


* 1/2 small yellow squash, sliced


* 1 (4-x6-inch) focaccia bread pieces, split horizontally


* 1/4 cup crumbled feta cheese


1. In a bowl, mix the mayonnaise, minced garlic, and lemon juice. Set aside in the refrigerator.


2. Preheat the grill for high heat.


3. Brush vegetables with olive oil on each side. Brush grate with oil. Place bell peppers and zucchini closest to the middle of the grill, and set onion and squash pieces around them. Cook for about 3 minutes, turn, and cook for another 3 minutes. The peppers may take a bit longer. Remove from grill, and set aside.


4. Spread some of the mayonnaise mixture on the cut sides of the bread, and sprinkle each one with feta cheese. Place on the grill cheese side up, and cover with lid for 2 to 3 minutes. This will warm the bread, and slightly melt the cheese. Watch carefully so the bottoms don't burn. Remove from grill, and layer with the vegetables. Enjoy as open faced grilled sandwiches.

Mom's Big Burgers


* 1 pound lean ground beef


* 1/2 (1 ounce) envelope dry onion soup mix


* 1/4 cup water


* 1 clove garlic, chopped


* 1-1/2 teaspoons hot pepper sauce


* 1/2 pinch chili powder


* 1/8 teaspoon ketchup


* 1/8 teaspoon prepared yellow mustard


* 1/2 pinch ground black pepper


* 2 cracked wheat hamburger buns


* 2 slices pepperjack cheese


* 1/2 avocado - peeled, pitted and sliced


* 1/2 bunch green onions


1. Preheat the oven's broiler.


2. In a large bowl, mix together the ground beef, onion soup mix, water, garlic, hot pepper sauce, chili powder, ketchup, mustard and pepper using your hands. Pat into 4 large thick patties. Place them on a broiler pan.


3. Broil the burgers for about 15 minutes per side, or until well done. Place buns on the broiler pan and toast briefly. Place whole green onions on the broiler pan at the same time, and just toast until limp.


4. Place burger patties onto the bottom halves of the buns and top each one with a slice of cheese and some avocado slices. Top with the top buns. Serve with green onions.

Kim's Macaroni Salad


* 1 (8 ounce) package uncooked elbow macaroni


* 3/4 cup mayonnaise


* 2 tablespoons cider vinegar


* 1 teaspoon sugar


* 1 teaspoon kosher salt


* 1/4 teaspoon white pepper


* 1/4 cup green onions, sliced


* 2 jalapeno peppers, seeded and chopped


1. Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Drain, and rinse under cold running water.


2. In a large bowl, mix together the mayonnaise, vinegar, sugar, salt, pepper, green onions and jalapeno peppers. Stir in the macaroni. Refrigerate until chilled before serving, at least 30 minutes.

American Potato Salad


* 5 pounds red potatoes


* 6 eggs


* 2 cups mayonnaise


* 1 onion, diced


* 2 green onions, thinly sliced


* 1 small green bell pepper, seeded and diced


* 3 stalks celery, thinly sliced


* 2 teaspoons salt


* 1 teaspoon ground black pepper


1. Bring a large pot of water to a boil. Add potatoes, and cook for 15 to 20 minutes, or until tender but still firm. Drain, cool and cut into cubes.


2. Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.


3. In a large bowl, combine chopped potatoes and eggs. Mix together mayonnaise, chopped onion, green onion, green pepper, and celery. Season with salt and pepper, then mix well. Cover, and refrigerate for several hours or overnight.

Some of the best picnics my husband I had were simple ones. Of course, we always hiked somewhere private. I would pack a daypak with things that would not get spoiled. Like a french baguette, salami or summer sausage, good cheese , some fruit in baggies a knife a cork screw and a bottle of wine.

Throw in a large beach towel to um sit on
I agree with sandwiches. Make or order his favorite. And take a thermos of his favorite soup if it will be chilly. Serve it in mugs. A couple sides could be some munchie items like olives or cheese or both, depending on what your sandwiches are. Brownies and/or cookies is a good idea for desert.

You can make crussant sandwiches with roast beef and cheese,if you want a easy casserol then:





shred chicken breast


2 cans of cream of mushroom with sour cream and mix it


then crumble up some rits and put them on top
