Hello, like I said I have two trees that are full of ripe cherries, but they are very sour. So I am looking for recipies that will allow me to use them and sweeten them up. How to Make a Super Sweet Smoothie With 7up and Cherries





Have you ever thought that smoothies weren't sweet enough?? Well, thats probably because you haven't made a 7up-marashino-cherry-canned-pears kind of smoothie!!!!








Ingredients





* Marashino Cherrys (the juice too)


* A can of 7up (or sprite)


* Canned Pears (Juice optional)





Steps





1. Gather the ingredients at the top of the page.


2. Put as many marashino cherrys as you want into the blender


3. Dump at least a half of the can of pears in the blender


4. Get a can of 7up or sprite and put that in


5. Turn the Blender on (the hi, low, or medium setting doesn't really matter)


6. Tadaa!!! You made a super-sweet smoothie!!








Tips





* You don't have to put the milk or water in like you would a regular ';healthier'; smoothie. That's what the cherry juice and 7up is for.


* This smoothie tastes really sugary!!!!

Sour Cherry Borscht





6 cups sour cherries (Montmorency preferred), washed and stemmed, but left whole with pits intact


6 cups water (or enough to cover by about an inch in a shallow pot)


1/2 cup sugar (or more to taste)


pinch of good cinnamon (Penzey's Vietnamese, for example)


2 eggs





Sour cream, cr猫me fra卯che, or Greek yogurt for serving





Place cherries, water, sugar and cinnamon in a pot. Bring to a boil, turn down the heat and let simmer for 10-15 minutes, until cherries are tender but not falling apart or losing their skins. Beat the two eggs well in a medium-sized bowl. Whisk in hot cherry juice from the pot, a tablespoon at a time, so that eggs become hot but don't curdle. When a cup or so of juice has been amalgamated, pour the egg mixture back into the hot pot of cherries and liquid and stir well. Taste for sweetness, and add more sugar if you like. We actually like this quite tart. It should taste richly of sour cherries, but the flavor deepens exponentially once the soup is chilled. Let the mixture cool to room temp, and then chill for several hours.





Serve cold with sour cream or one of the other options dolloped on top. Warn others about the pits, and bring a little dish to the table for spitting out pits. You could, I suppose, pit the cherries before you make the soup. We never did, so I never will. The pits supposedly add to the flavor. While spitting out pits may seem inelegant to some, I think of it as one of those messily fun and companionable summer eating activities, like cracking lobster or crabs, or eating watermelon.





Sour Cherry Streusel Cake





I'll give you this with the modifications I made to it, which were to add almond paste, almond extract, and to make half again as much of the streusel topping, since almond is lovely with cherries, and the first time I made this cake the topping was a little skimpy for me. This is also sumptuous made with other fruits -- peaches, apricots, plums, berries. I made it not long ago with a combination of strawberries (which I generally never use for baking) and black raspberries, and it was quite wonderful





2 cups (500 mL) all-purpose flour


1/2 cup (125 mL) granulated sugar


1 tbsp (15 mL) baking powder


1/4 tsp (1 mL) salt


1/3 cup (75 mL) butter, at room temperature


3 1/2 oz. almond paste


1 egg


1 cup (250 mL) half-and-half or light cream


1 tsp vanilla extract


1/2 tsp almond extract


2 tsp grated lemon zest


4 - 5 cups (1 L) pitted, drained sour cherries or other seasonal sliced fruits





Streusel Topping





1 1/2 cups (375 mL) all-purpose flour


1 generous cup (260 mL) brown sugar


3/4 cup (190 mL) butter, at room temperature





Preheat oven to 350掳F (180掳C).


Combine flour, sugar, baking powder and salt in the work bowl of a food processor. Using the work blade, cut in butter and almond paste to make coarse crumbs. Beat egg in a bowl; stir in cream, zest and extracts. Pour this slowly through the feed tube of the food processor, and pulse the mixture until just mixed -- it should make a quite thick batter. Drop by spoonfuls into a parchment-lined, generously buttered 13 x 9-inch (3-L) cake pan and spread evenly. Top with cherries in a single layer.


Combine flour and brown sugar in a bowl. Cut in butter using a pastry blender or fork to make coarse crumbs (or you can do this first, in the food processor, before you make the batter and reserve it). Sprinkle evenly over fruit. Bake on middle rack of oven for 45 to 50 minutes or until top is golden. Place pan on a rack and let cool. Cut into squares and serve.

I would agree with island, all flours are not created equally. Whole wheat has the highest protein content, around 13%, while AP has about 11%. IT dosent sound like a lot but in the baking world those few % make the difference between a cake and super bouncy balls.Recipe calls for two cups whole wheat flour. Exactly, its still flour so use the same amount.
I wouldn't substitute if I were you unless you intend to adjust the amount of raising agent too, otherwise you may end up with an excessively light cake or it may have too much moisture in it. If you cannot find whole wheat flour try mixing two parts all purpose flour with one part bran and using that mixture instead, or I suggest you find a recipe that calls for all purpose flour.

Can anyone suggest a veg. soup recipe for my two year old suffering from sore throat?

My two yr old son is having sore throat and I would like to get rid of it b4 it develops into cold. Can anybody suggest me a vegetarian soup recipe which is also a cure for sore throat? He can have it easily if it involves mashing or blending of vegetables. He is not eating solid food coz of the sore throat. take out some juice from ginger and mix it with equal part of honey. give the same to the child, about quarter tea spoon, thrice a day. or cut three or 4 small pcs of ginger, put them in a cup, add one spoon of honey and about four times hot water. keep it for some time and feed it to the child, say one or two tea spoons at a time . i dont have any soups, but honey is a proven medicine for a sore throat:)

    Pot Roasted Eye of Round


    A flavorful lean pot roast of beef recipe.


    INGREDIENTS:


    2 to 3 pounds beef eye of round


    1/8 teaspoon salt


    1/8 teaspoon black pepper


    4 to 6 medium potatoes, halved


    3 ribs celery, cut in large pieces


    3 cups baby carrots or carrots cut in chunks


    1 cup brewed black coffee


    2 tablespoons cornstarch


    PREPARATION:


    Salt and pepper roast and place in a Dutch oven. Pour coffee over the roast. Place potatoes, carrots, and celery around the beef roast. Cover and simmer for 2 hours, or until meat is tender. Remove roast and vegetables.





    Place broth in freezer for several minutes, until fat rises to top. Skim off fat then stir cornstarch into the broth. Add meat back to broth and heat thoroughly.

    This'll sound weird, but yeah.





    First of all, preheat the oven. 400 degrees Fahrenheit. Seems hot, yeah, but it'll come out great.





    Salt and pepper the roast on all sides, and brown the outsides in a pan. Cut up some carrots and potatoes.





    Get one of those Reynold's Oven Bags or make your own out of aluminum foil ... tear two big pieces and fold their edges together tightly.





    Put the roast and vegetables in there. Now get out a bowl and mix these things together:





    One cup (not can) Coca-Cola (yes, Coca-Cola)


    One packet brown gravy mix


    One can cream of mushroom soup





    Pour this over the roast and vegetables inside the bag. Close the last side tightly. Oh, I mentioned to put this on a baking sheet, right?





    Stick everything in the oven and leave it for 45 minutes. Flip the whole bag over (carefully!). Put it back in the oven for another 45 minutes to an hour.





    Remove and cut bag open (hot!). Let cool a few minutes, remove from bag, slice and serve.





    Mmmmmmm.





    The gravy is the best I've ever had or made. You might want to double it. If so, here's a hint: the can of Coke is about 2 cups. Just pour it all in.

    Marinade:





    1/2 cup Red wine


    2 teaspoons Beef bouillon


    2 cups Water


    Stuffing:





    1 tablespoon Butter


    2 Cloves garlic minced

    1/4 cup Minced fresh parsley


    2 Slices bread torn into cubes























    To prepare roast make a lengthwise cut down center of roast, leaving 1/2 inch intact on bottom. Do not completely cut through roast!Open roast and turn over. Repeat procedure making two lengthwise cuts through center of right and left sides. Be careful not to cut through roast.


    Open roast and flatten roast using a meat mallet. Place roast in plastic bag with marinade and let marinade in refrigerator 4 to 6 hours, turning occasionally.


    In skillet saute garlic, onion, mushrooms and butter.Remove from heat and add parsley and bread crumbs.Remove meat from marinade and pat dry. discard marinade.


    Spread stuffing over meat and roll jelly roll fashion starting with long side. tie roll with string at intervals.


    Place seam side down on roasting rack and roast 325 uncovered for 40 to 60 minutes ( 20 minutes per pound )Let roast rest 15 minutes before serving.


    Note: meat department may double butterfly roast for you if you don't want to cut roast as instructed above.

    THe breast of a chicken -if you remove the bone -has the form of a heart! Place it in a baking pan, sprinkle with salt and oregano and cover with bacon strings. Just bake it in a moderate oven or you can do the same on a hot platter. Serve it hot, heart shaped and decorate with steamed baby vegetables.

    Bacon wrapped beef tenderloin, sauteed garlic and butter zucchini, and bib lettuce and avocado salad with Italian dressing. I've made this and it's taste great! Look online for detailed directions to these dishes.
    Shrimp Scampi


    It's easy to make, delicious and a lovely romantic meal.





    Use large uncooked shrimp (sold in bags frozen at the market), peel them.





    Melt some butter in a skillet and thin it out with a little olive oil if you like. You can also thin it out with white wine if you prefer. Taste test for the perfect balance.





    Saute you shrimp in the sauce until pink. Don't over cook them.





    Meanwhile have your pasta cooking (angel hair is my favorite)


    When done, drain well and put it into a nice serving bowl. Drizzle the juice of 1/2 fresh lemon over the pasta. Add the shrimp and sauce, season with salt and white pepper or black if that's what you have and toss to coat everything.





    Now to pretty it up, sprinkle it with chopped parsely. Have shredded parmesan on the side and a nice baguette sliced to soak up some of the sauce.





    Don't forget the wine. Enjoy yourselves.

    ORANGE DREAM CHEESECAKE


    1/4 cup Honeymaid graham crumbs


    2/3 cup boiling water


    1pkg. (10.2g) jell O light orange jelly powder


    1 cup 1% cotage cheese


    1 tub 250g philadelphia light cream cheese spread


    2 cups thawed cool whip light whipped topping





    1) Sprinkle crumbs into bottom of 8 or 9 inch springofrm pan or 9'; pie plate sprayed with no stick cooking spray.


    2) Stir boiling water into jelly poder in large bowl at least 2 min. until completely dissolved. Cool 5min. Pour into blender. Add cheeses, cover, blend on med speed until well blended occasionally scraping down side of blender pour into large bowl.


    3) Add whipped topping stir gently until well blended. Pour into prepared pan, smooth top with spatula. Refrigerated 4hrs. or until set. Remove side of pan just before serving. Makes 8 servings.

    broiled tilapia parmesan (easy and delicious) and twice baked potatoes...get recipes from allrecipes.com. Serve with zuchini, squash and tomatoes...just cut up zuchini and squash and pan fry in a couple of pats of melted butter. Stir in a can of stewed tomatoes adn serve!
    500g thin cut fillet steak sliced into strips


    500g closed cap mushrooms sliced


    250g chestnut mushrooms sliced


    1 onion diced (small)


    2-3tbsp tomato puree


    500g low fat creme fraiche


    1-3tbsp mixed herbs


    good splash of brandy





    fry off onion in some heated oil, when softened add meat, cook for 3-6 mins, add 1/3 of herbs, add mushrooms cook down till mushrooms are nearly cooked, add tomatoe puree and brandy, cook down for 3-5 mins stir in creme fraiche lower heat add rest of herbs, cook until is hot throughout. Serve with pasta and fresh bread.

    2 boneless skinless chicken breasts


    4 slices bacon,cooked


    4 slices sun-dried tomatoes,in oil

    1 c. spinach, cooked and drained

    dried basil


    dried oregano


    vegetable oil





    1. Mix flour, basil and oregano in a mdeium bowl and set aside


    2. Slice each chicken breast length wise about half way through-making a pocket


    3. Stuff each chicken breast evenly with minced garlic, bacon, sun dried tomato, spinach and mozzarella


    4. Close each chicken breast with tooth picks


    5. Coat both sides of chicken breasts with the seasoned flour


    6. Heat the vegetable oil in a skillet over medium heat, add chicken breasts


    7. Cook each side until done (about 15 mins. total)


    You can serve this over pasta.

    I need help finding two recipes that are for Christmas snacks, I ate both today.?

    So the first snack is called ';Puppy Chow.'; It is like some kind of Chex cereal or something, that is covered with chocolate, peanut butter, and confectioner's sugar or something.





    The second one was a cookie, but they were cut into squares and were very thin. So they were kind of small. The only thing I can remember right now is the crumbled up peppermint on them.

    EASY GOB COOKIES





    1 deep chocolate cake mix


    1 1/4 c. flour


    2 egg whites


    1 1/2 c. sugar


    3/4 c. hot evaporated milk


    3/4 c. butter


    3/4 c. shortening


    2 tsp. vanilla





    Follow directions on cake box adding flour. Drop by


    teaspoons on ungreased cookie sheet. Bake at


    350 degrees for 10-12 minutes. Makes approximately 2 dozen.





    FILLING:





    Beat the egg whites until stiff. Add the sugar and the


    hot evaporated milk. Beat until the sugar is dissolved.


    Keep beating and add the butter, shortening and vanilla.


    Beat at high speed until smooth and creamy. Spread


    filling between 2 cooled cookies.


    Peanut Butter Frosting


    1/2 cup butter


    1 cup creamy peanut butter


    4 cups confectioners' sugar


    1/3 cup cream


    In a large bowl, beat butter and peanut butter until light and fluffy. Slowly beat in 1/2 of the confectioner's sugar. Mix in 1/4 cup of the cream. Beat in the remaining confectioners' sugar.     I've made this before, but honestly, I find them a whole lot of work. I probably won't make them again unless someone specificially requests them from me.

    Cake:


    2 cups sugar


    1/2 cup vegetable shortening


    2 eggs


    1 cup buttermilk


    1 cup boiling water


    1 teaspoon vanilla extract


    4 cups all-purpose flour


    1/2 teaspoon baking powder


    2 teaspoon baking soda


    1/2 cup cocoa





    Filling:


    5 tablespoons flour


    1 cup milk


    1 cup sugar


    1/2 cup butter, softened


    1/2 cup vegetable shortening


    1 teaspoon vanilla extract





    Preheat oven to 425潞F. In a large mixing bowl, cream together the sugar and shortening until fluffy. Add eggs and continue to beat. Stir together buttermilk, boiling water, vanilla, and blend this into the creamed mixture at low speed.


    Sift together flour, baking powder, baking soda, and cocoa. Add to mixture 1 cup at a time, blending well at low speed. Batter will be very thin but do not worry. Drop by teaspoons onto ungreased cookie sheet. Bake for 5 minutes. Allow to cool and transfer onto waxed paper.





    To make the filling, place flour into saucepan and slowly add milk, stirring until smooth. Set over medium heat and cook, stirring until very thick. Mixture should become as thick as solid vegetable shortening. Remove from heat and allow to cool completely. In a medium bowl, cream together sugar, butter, shortening, and vanilla using a handheld electric mixer. Add the cooled flour mixture and whip until fluffy. Spread onto bottom side of cookie and top with another cookie to make a sandwich. Wrap individually in plastic wrap and store in refrigerator.

    I don't have the recipe for that, but here is a recipe for a really good and easy to make cake that has a cream cheese filling. I baked it for Thanksgiving, and it was gone within the hour...





    Earthquake Cake





    Preheat oven to 350掳F.





    Spread 1 cup chopped pecans on the bottom of a greased 13x9 cake pan. On top of nuts sprinkle 1 cup coconut.





    Mix 1 box German chocolate cake mix (Betty Crocker) according to package directions.





    Pour the batter gently over the nuts and coconut and set aside.





    Mix together one stick of softened butter (1/4 lb), one (8 ounce) package of softened Phildadelphia cream cheese, and one box of confectioners sugar (1 lb).





    Spoon out the cream cheese, sugar and butter mixture over the top of the cake batter without stirring it into the cake batter.





    Bake in a preheated 350掳F for 45 minutes or longer depending on your oven.





    The cake will crack in the middle. That's why it is called Earthquake cake!

    oh, two cloves minced is about a spoon's worth of garlic. If you like garlic feel free to use a touch more than that.

    For kids that are fussy eaters I would suggest getting them involved in the cooking. I know two may seem young for this so obviously the cooking has to be fairly simple! Try doing a salad face or making your own pizza - your child could do his/her own topping if you cut up various things and put them into bowls. Fairy cakes too are very easy and fun to do with a young child. Then you can use a bit of bribery by saying eat all your dinner and then we can have one of your lovely cakes!

    You can make macaroni and cheese with browned ground turkey, add a little bit of taco seasoning to the meat after you have browned the meat and mix together. If you allow him to eat chips, try and give him Ritz crackers that are baked, a lot healthier and he wont know the difference. My son loves rice cakes, I get them in cheese flavor, and he loves them.
    My two year old is the same way. Exact same way! He only likes spaghetti, chips, and fruit!





    Since my two year old son doesn't like veggies, I buy that new V8 splash made from fruit and veggies. It tastes fruity so he loves it and he doesn't know he's getting a serving of veggies with every cup!





    He also loves bread. So I buy that whole weat breakfast bread (different varieties- there's blueberry, cinnamon and raisin, and I think a few others...he loves it!)





    Have you tried cutting his sandwhiches into shapes with cookie cutters? My kids like this.





    If your really worried about his eating habits, try buying pediasure or generic brand pediatric drinks for toddlers. I give my son one pediasure a day during the days he's extremely picky. (he loves the chocolate flavored) and I don't stress too much about what he's ';not'; eating.





    Also, once a child turns two, they don't grow as fast as they did from infancy to toddlerhood and their appetites change a little.





    Just try to give him varieties and if he's hungry, he'll eat it. If he only get's his favorite foods, he'll never know to enjoy new foods.

    you need to let him try lots of different things, there may be things he will like but he hasn't tried yet, fish pie, lasagne etc. also mash up veg with his food so he cant see it but still gets the vitamins. don't give in to a fussy eater!
    make a suger and cinnomon samndwich. take a piece of bread and put butter on it. sprinkel sugar and cinnomon on the butter and tosat it in the oven. put the 2 haves on top of each other.

    Dirty rice is made ';Dirty';by the chopped chicken livers and gizzards added.


    1 T oil


    5 chopped chicken livers


    5 chopped gizzards


    1 onion chopped well


    1 bell pepper chopped well

    4 C chicken broth


    2C rice





    Heat oil in pan ...add gizzards and cook stirring until browned..add livers and cook until no longer pink...stir in onions ,Peppers and Celery and cook until onions are translucent.

    INGREDIENTS


    1 box (5.8 oz) roasted garlic and olive oil芒鈧€渇lavored couscous mix


    3 tsp oil


    1 lb skinless, boneless chicken thighs


    1/2 tsp salt


    1/4 tsp pepper


    1 Tbsp flour


    1 Tbsp bottled chopped ginger (see Tip, below)


    2 tsp curry powder


    1 can (14 oz) lite coconut milk


    1 bag (10 oz) shredded carrots


    1 cup dried fruit bits (from a 7-oz bag)


    PREPARATION


    1.Put couscous, spices from packet and 2 tsp oil in a medium bowl. Add 11/4 cups boiling water, stir to mix, cover and let stand.











    2.Heat rest of oil in a large nonstick skillet over medium-high heat. Season chicken with 1/4 tsp each salt and pepper. Cook 3 minutes per side or until golden.











    3.Meanwhile stir flour, ginger, curry powder and 1/4 tsp salt into can of coconut milk. Add to skillet; top chicken with carrots and fruit. Bring to a simmer, cover and cook 4 minutes or until chicken is done, sauce thickens slightly and carrots are crisp-tender. Serve with couscous.

    Ingredients:


    1 cup uncooked long grain white rice


    2 1/2 cups chicken stock


    1/2 stick of butter


    4 ounces chicken livers*


    4 ounces chicken gizzards*


    4 ounces pork*


    3/4 cup finely chopped onion


    1/4 cup chopped celery


    2 cloves chopped garlic


    Coarse ground black pepper, white pepper, and cayenne pepper (more or less to taste)








    Turn this recipe into a puzzle! [click]








    Directions:





    Cook the rice in 2 cups of the chicken stock (cook rice in the usual manner - about 20 minutes). Reserve aside the other 1/2 cup of the stock. In a large frying pan that has a cover, fry the meat mixture in the butter until it loses all its pink coloring. (IMPORTANT, especially when using pork or organs!)





    Add in the onion, celery, garlic, and peppers. Saute together about 4-5 minutes. Pour in the reserved stock and add the cooked rice. Stir all ingredients together. Cover and simmer over a low heat for about 8-10 minutes - until liquid is absorbed.





    *If you can, get your butcher to grind the livers, gizzards, and pork together for you. If not, either chop them very finely or grind them coarsely in a food processor.

    Cous cous is pretty straightforward but can be as complex as you want to make it.





    -Start by heating a tablespoon of oil in the bottom of your pan.


    -When the oil is hot, add some diced onions %26amp; garlic (or any vegetables that you'd like to include as a garnish).


    -Saute the vegetables until tender.


    -Add your cooking liquid to the pan, in an equal amount to the amount of cous cous you want to make. I like to use chicken broth but any type of broth or even water will suffice (just be certain to season it up while it's heating).


    -Once your cooking liquid comes to a boil, pour in your cous cous, cut off the heat, and cover your pan.


    -After about 3 minutes, remove the cover and ';fluff'; your cous cous with a fork.

    My hubby cooks couscous in chicken broth and adds a variety of herbs depending on his mood. We have fresh basil, thai basil, rosemary. Garlic is usually a gimmee in this house.

    10 ounces fusilli pasta


    1 onion, chopped


    1 green bell pepper, chopped


    2 tomatoes, chopped

    Pretty easy. Freeze 2 fillet Mignon steaks. They can thaw out during the day and be ready for dinner. Take some asparagus and a couple of potatoes.


    1. Boil potatoes(cut in chunks) until almost done. Remove from water.


    2.) In same water cook asparagus


    3. While asparagus cooks, cook steaks in a fry pan.


    4. When steaks are done remove from pan, add butter to pan with meat residue. Finish off potatoes in the butter/juice mixture


    This is easy to pack, easy to cook, and will taste like an expensive steak-house meal.

    Grilled Oriental Vegetables





    Active time: 20 minutes

    Makes 12 cups





    4 stalks celery, sliced diagonally 1/2 inch thick


    4 carrots, peeled and sliced diagonally like the celery


    4 ounces snow peas, tips removed, sliced diagonally into two or three pieces


    1 red pepper, cut in narrow strips


    1 red onion, cut into eighths


    1 bunch broccoli, stems peeled, cut in florets


    8 ounces mushrooms, sliced (I used baby bellas tonight)





    1/2 cup vegetable oil


    2 tablespoons soy sauce (variation use 2 teaspoons)


    1 tablespoon garlic (variation use a single clove)


    1 tablespoon fresh ginger (variation use 1 teaspoon, OR use ground ginger as a substitute, it's fine and in fact MIGHT be better)


    1 1/2 teaspoons salt





    Freshly ground pepper





    Collect vegetables in a very large bowl. Stir together oil, soy sauce, garlic, ginger and salt and pour over vegetables. Stir well until vegetables are well coated.





    FOR GRILL: Divide vegetables among 8 (or more) strips of aluminum foil, each slightly longer than wide. Sprinkle each packet with pepper. Wrap foil around vegetables and seal. Place on hot grill for about 20 minutes (I'll confirm the timing with my Dad) or until vegetables are tender crisp.





    FOR OVEN: Stir in pepper. Transfer vegetables to large casserole dish, cover with foil and bake at 350F for about an hour. (Diane's notes say 30 minutes but this wasn't nearly long enough for the volume of vegetables in the casserole dish I was using last night.)

    Chickpea Curry


    - 1 can chickpeas (2 cups), drained and rinsed


    - 3/4 cup salsa (yeah, I know, not exactly authentic, but it's easier than dicing and cooking tomatoes, jalapenos and cilantro)


    - 1 medium onion, diced (~3/4 cup)


    - 1 tbsp garam masala


    - 1 tsp pureed garlic (or a pinch of dried)


    - 2 tbsp light vegetable oil


    - 1/2 cup plain soy yogurt (it tastes fine if you leave it out, too)


    - 1/2 cup water, tomato juice, or veggie broth





    Fry the spices and the onion in the oil, on low, until the onions go translucent and soft.


    Add the water, salsa and chickpeas. Cook for 20-30 minutes on low, until the water has boiled down. Stir frequently and roughly so that some of the chickpea starch can thicken up the liquid a little.


    Remove from heat and stir in the soy yogurt if you wish to. Serve with plain white rice.





    I also like to make falafels from a box powder and serve them in wholegrain pitas with tahini, sliced tomatoes, and a little parsley. I've served them with sweet potato fries on the side, which are super easy to make by just cutting and frying up plain sweet potatoes.
    Lot of indian food are close to vegan. Google for some recipe, you might come across something fun.
    Cous-cous (a middle eastern rice). cook it on the side. Bake some vegetables (like carrots, potatoes, tomatoes, minature onions, brussel sprouts beets, etc.) in a little oil, with some seasoning (like thyme). Back the vegetables until they start to crisp some places on the edges. To eat it, put some of the cous-cous on your plate, and put some the vegetables on top.





    Get some fancy grape juice (you know, comes in a wine bottle but is unfermented).





    edit: I looked at the recipes/ideas above: any of them are excellent. I can never understand how people think vegans go can find nothing to eat. PS. If you go with noodles, a salad is a given.
    My own recipe (not too original - but yummy):


    I use a large pan ( a few inches deep) and fill it with penne noodles about halfway. Submerge the noodles in water and then fill the pan up the rest of the way with your desired spaghetti sauce. Bake in the oven on 375 for about 45 minutes or until sauce begins to brown.





    To take more time, you could fry some tofu and add it in, then use fake shredded cheese and sprinkle it on the top of the dish and bake it for an extra 15 minutes.

    Broccoli in Sweet Garlic Sauce





    Ingredients:





    * 2 cups vegetable broth


    * 2 cloves garlic, minced


    * 1/4 cup soy sauce


    * 1 tsp ginger


    * 1/2 tsp red pepper flakes


    * 1/4 cup sugar


    * 2 bunches of broccoli, chopped


    * 2 tbsp olive oil


    * 1 1/2 tbsp cornstarch


    * Rice





    Bring the vegetable broth to a boil. Add the garlic, soy sauce, ginger, red pepper and sugar, stirring to combine well.





    In a large skillet, saut茅 the broccoli in olive oil until broccoli is just barely tender.

    All you have to do is take the recipe and reduce it to serving for two or three. Just do it with ratios (and or fractions) or do half of everything in the recipe. Meatloaf is awesome left over so why not just make the entire thing? Anyhow, it is simple to make so you can really measure it on your own also. I used the recipe measurements the first time I made it, now I just make it on my own.
    For a very hearty Meatloaf add about 30% by volume of Rolled-Oats (Oatmeal). It is better for your heart and very filling, and it is small enough to be almost unnoticable, but giving it a warm, aromatic full flavor. Spices and seasonings can be added-in, such as garlic powder or 1/8th small Garlic Cloves imbedded inside after forming or blended into the mix, Salt, Pepper, Onion Powder, Celery Salt, Dill-Weed, Hot Peppers, Etc. as desired, to taste, or in any combination of your favorite spices which can be mixed into the mixture or sprinkled on top before cooking. Spices with a more bold flavor or heat to them should be used no more than about 1/8 to 1/4 teaspoon per pound of ground beef or mixed ground beef/ground pork in a 50/50 mixture. Top with any type of tomato product you have: Stewed Tomatoes, Pureed Tomatoes, Diced Tomatoes, Tomato Paste, Ketchup, whatever you prefer - Just one of those or a few combined, Example: Tomato Paste with Diced Tomatoes drained and pressed in to the paste. Then drape with any of these: Bacon Strips, Canadian Bacon, Irish Bacon, Pork Fatback Bits (Salt Pork), Pepperoni, Salami, Etc. A variety of these other salty meats may be used also. Cook for 40 to 60 minutes for between 1 and 3 pounds overall weight in a preheated oven at around 350 to 375 degrees Fahrenheit so as not to dry it out. (Cook it low and slow to keep it moist). Meatloaves can be cooked on a roasting pan or can also be cooked in a deep Pyrex oven-safe bowl or a bread loaf pan placed in a conventional oven or in a microwave oven use Pyrex only - NO Metal pans with the tomato sauce topping, meats, veggie slices and seasonings poured on the top after pressing the meatloaf mix into the bowl. Microwave cooking times in a deep Pyrex bowl will be less. Usually 30 to 45 minutes or so, even for a larger meatloaf in a big bowl because that style of cooking is two-fold. It comes out very moist but fully cooked like that as the sauce and moisture don't escape so it literally steams it too, while cooking with the microwaves from within. You can also add any of these on top for the last 15 to 20 minutes of cooking time: Pepper Rings, Onion Slices, Tomato Slices.Meatloaves can also be made in a rolled ';medallion'; style and stuffed with sliced meets and cheeses or even par-boiled broccoli florets, various colorful peppers in many colors, etc. then sliced to reveal these hidden treasures. Some people even roll pre-peeled hard-boiled eggs inside or green or black olives that look marvellous when sliced and also add great nutritional values. Learn to make recipes by proportion and not so much exact measured quantities and you may enjoy cooking more. Many of the greatest Chefs never measure ingredients so exactly but think constantly about ratios of diverse flavors and relative proportions of each ingredient. My advice to you is to just be intuitive in the kitchen and experiment with the balance of flavors you like. And learn to think in terms of how to cut a recipe in half or double, triple, or more upsize the yield by ';sensing'; it. My motto is this: ';If you like this... and you like that... why wouldn't you like this and that together???'; Right? Just get out there in the kitchen and cook!
    Why go to all that trouble, extra time, %26amp; wasted energy resources to make just one serving each for two people when you cook?





    My husband and I spend a happy afternoon making several meat loaves in one cooking session, eating our fill at dinner, then slicing and freezing the remaining meatloaf portions for future dinners.





    Then, when we feel like a home-cooked meal, but don't have the time to cook from scratch, we just microwave some of the frozen slices, along with Minute rice and a vegetable, for a quick, yet satisfying meal.





    And if you put freezer paper between the slices as you freeze them, they are so easy to remove at a later date, one or two slices at a time.





    By cooking several meat loves in one cooking session, then freezing the leftover slices, you save time, you save your own energy, and you save energy resources by not having to heat the oven for each and every meal. And you get a home-cooked meal with the speed and ease of a TV dinner. Best of luck. :-)
    Awhile back I had two different families living under one roof. So I had to come up with some interesting versions of recipes to make. In one of my kraft magazines I got this recipe for mini meatloafs cooked in a muffin tin. That wasn't the best part. Instead of using breadcrumbs they used Stove Top stuffing or whatever your favorite boxed stuffing is. They turned out really great. You just took your standard recipe, divided it in half, made decent sized balls and placed them in your muffin pan. Then popped them in the oven. They cooked in half the time, plus they were in individual sizes.

    well i'm no chef right but i used to make this one using a pressure cooker, pretty easy and you can customise it as you wish, the mix was used to fill a 1lb bread baking tin and then sealed with a few layers of foil, into the pressure cooker for 30Min's.


    ingredient approximate as follows:





    6oz lean mince


    6oz sausage meat


    large green bell pepper


    large onion


    tomato puree (give it a good shot)


    seasoning, salt pepper etc





    Method: Chop it all up and put it all into a big mixing bowl Just get your hands in there and mix the whole thing up, great fun!





    that's the base mix, don't skimp on the tomato i used to put at least half a tube in, you can jazz it up to your own taste with garlic, Chili or whatever.





    If you don't have pressure cooker then i guess you can roast it, but it will take a lot longer like one and half to two hours, just make sure its cooked !!!!





    By the way, this is great cold served with new potatoes and mayo.





    and as an option and its a neat little trick you can put a hard boiled egg into the middle of the loaf when you pack it into the tin, that way when you slice it up it has the appearance of ham veil and egg pie,
    This may not be what you are looking for...but there are several solutions to your problem.





    Using your otherwise fav recipe, cut all your ingredients in half. There are mini loaf pans so you only cook what you want. If you can't find one, use a muffin tin or shape into patties and bake that way.





    Make a whole loaf and save some for lunch the next day.





    Make a whole loaf and make a plate for a nearby elderly neighbor who might benefit from you sharing.





    Make the mixture at full recipe or even double recipe and cook off all the mini loaves at once, and freeze them. Meatloaf freezes beautifully.
