Chopped citron is not the same as citrus peel directly from an orange or lime/lemon. It is candied peel. You can make it yourself by cooking fruit peel without the pith (no white stuff) in a simple syrup (equal amounts of water and sugar). Bring syrup to a boil and simmer peel in syrup for 30 minutes. Remove and place on wax paper to dry.





Also, in the United States you want to be looking for candied fruit, not citron.I have two recipes asking for chopped citron. Does this include the peel, or use the fruit part only?

That would be just the fruit part only. Ive never cooked the peeling. Good luck.
It all depends how you like th etaste strong or not strong. Strong leave peel on.
I prefer chopped liver...on rye with chopped onions...yummy

it would only be the fleshy part of the citron.
you can do either or both. the peels will cook down and make it smell stronger and maybe a bit bitter, or less sweet
You can use the fruit, and the peel can be used also, but it will only take longer, to use the peel the peel must be boiled down till it is soft then it can be used.
