Recipes for two!?

My boyfriend and I have just moved away from home and into our first apartment together :) Now, we're trying to put together menus and planning for meals for the whole week (in order to save and conserve our money, we're hoping to buy everything for a whole week at one time). The only meats i eat are fish and chicken, but he'll eat just about anything [don't most men? :) ] I was wondering if you guys had any recipes to share with us that preferably





1. are more on the cheap side. we aren't very pressed for money, but we are trying to save up some.


2. don't take a long time to make.





we both like to cook and experiment so anything you guys throw at us will be considered! Thanks in advance!

Pecan Tilapia for two.





Handful of roasted pecan halves or pieces


1 tablespoon butter, melted


2 tilapia fillets, skinned and boned


Juice from 1 Persian lime


Salt to sprinkle


Touch of white pepper


1/4 cup crushed pecan crumbs (bread crumbs if you prefer)


1 small shallot, minced


3 tablespoons butter


1/4 teaspoon Madras curry powder


1/4 teaspoon ground coriander seed


1 seedless Florida navel orange, membranes removed and sectioned





In a small pan, warm the pecans in the butter until coated. Keep warm in the pan.


Saturate the tilapia fillets in the lime juice and sprinkle salt over.


Add a touch of white pepper to the pecan crumbs and coat the fillets. Set aside.


In a shallow, non-stick skillet, cook the shallot in the butter over low heat until soft. Stir in the curry powder and coriander. Add the fillets, turning the heat to medium. Cook less than 1 minute, or until browned on one side. Turn fillets over and cook until browned on the other.


Remove fillets to two plates. Cover with the nuts and set orange segments across the top or around the plate.Recipes for two!?

This is called white sauce but it is useful as you'll discover, for a lot of different good things to eat and it's easy!


4 tbl spoons of margarine or butter in a sauce pan melted over medium heat


4 tbl spoons flour


two cups of milk


4 pieces of toast


about a cup of chopped leftover meat , i.,e., chicken, ham, or the little jars of dried beef in the supermarket. (it's a little expensive)





Remove the melted butter/margarine and stir in the flour to form a paste


Stir in the milk


Cook over medium heat til the mixture thickens and you see bubbles trying to rise to the top. Keep the heat on medium throughout this process


you can then toss in the chopped meat


Pour over the toast and enjoy.


Fried potatos are good with this.
Congrats to both of you, Holley and Timmy. Here is a super easy recipe that can be adapted for fish or chicken, you just cook longer for the chicken, clean up is a dream, and no pan!





2 long sheets of foil (I use Reynolds pop up sheets)


2 salmon filets (or breast of chicken)


assorted veggies (asparagus, zuchini, cauliflower=whatever combo you like.


a little olive oil, salt, pepper, herbs, seasonings


squeeze of fresh lemon or lime





Place some of the veggies on the center of the foil. Put the fish or chicken on top of the veggies. Season as desired. Drizzle with olive oil and lemon (I place a thin slice of lemon on top of the fish) Bring both ends of the foil up over the fish and make a fold. Fold in the sides of the foil to make an enclosed packet (leave enough airspace for steaming action to occur) Place in preheated 350 degree oven-about 12 minutes for fish, and about 20 for chicken. Remove from oven and allow to stand 5 minutes. Serve each package directly on the plate-half the fun of this is opening it and the steam and scent of it coming out. I serve this with rice or potato and a nice salad and bread. Super simple, no pan to wash, just toss the empty pack in the trash. I use this type of packet for other things too, like individual potato au gratin, shrimp with precooked rice or pasta, etc. You can season with cocktail or chili sauce, etc. Use your imagination. I cook something in a packet most nights of the week-my 12 year old loves opening it to ';discover'; whats for dinner. Enjoy your new life together. I hope this was helpful





edit: the cool thing about this is you can cook different things in different packets at the same time-that way Timmy can have some of his other meats or smoked sausage and beans-just adjust cooking time, put your fish in when his is close to being done, etc
Stir Fry is really easy and fun... you can make as much or as little as you want. Just add any veggies and even chicken, soy sause and let it carmalize.. it so good!!1
Creamy Fettucini Alfredo





1 鈥?8 oz. Package Philly Cream Cheese (I use the light version 鈥?1/3 less fat), cubed


戮 cup (3 oz.) fresh grated parmesan cheese (I like De Giorno, don鈥檛 use Kraft)


陆 cup margarine (I use I Can鈥檛 Believe It鈥檚 Not Butter Light)


陆 cup milk (I use 1% or 2% lowfat)


8 oz. fettucini, cooked, drained (I use the fresh Contadina low fat one)











In large saucepan, combine cream cheese, parmesan cheese, margarine and milk;


Stir over low heat until smooth. Add to drained fettucini and toss lightly. Sprinkle with fresh parmesan cheese if desired. Makes 4 servings.





Serving Suggestions:


I serve this with chicken parmesan, salad, and garlic bread.





Quick Chicken Parmesan





4 Boneless Chicken Breasts, pounded flat


1 jar Spaghetti Sauce (I use Prego mushroom and garlic)


3 oz. Mozzarella Cheese, grated


2 cups Italian Bread Crumbs


2 oz. Parmesan Cheese


1/2 tsp garlic salt


1 egg, plus 1 tbs water, slightly beaten





Mix Italian bread crumbs, parmesan cheese, and garlic salt together in bowl. Beat 1 egg in another bowl, 1 tbs water and a dash of garlic salt. Dip chicken in egg, then in crumbs and fry in oil until brown on each side (10 鈥?15 min each side). Pour spaghetti sauce over chicken and sprinkle with cheese, cover so cheese melts and serve. Makes 4 servings. This makes really good leftovers, just cut in half if you only want 2 chicken breasts.
