Three Cheese Manicotti

INGREDIENTS:


1 (8 ounce) package manicotti pasta


16 ounces ricotta cheese


6 ounces shredded mozzarella cheese, divided


6 ounces shredded Monterey Jack cheese


2 tablespoons sour cream


1/3 cup dried bread crumbs, seasoned


1/4 cup chopped fresh parsley


salt and pepper to taste


2 cups spaghetti sauce

DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C).


Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente, drain.


Meanwhile, in a large bowl, combine ricotta cheese, 4 ounces mozzarella cheese, Monterey Jack cheese, sour cream, bread crumbs, parsley and salt and pepper to taste; mix well.


In a 9 x 13 inch baking dish, spray dish with non-stick cooking spray and cover bottom of dish with a thin film of spaghetti sauce.


Fill each manicotti with cheese mixture and place in dish; cover with remaining sauce. Sprinkle remaining mozzarella cheese on top of sauce.

Yeah my bf made some pasta, umm tagliatelli I think then just mixed the cheese in when you cook the pasta, but it takes ages to clean the pan after.
Spinach and Feta Pasta





Spinach, tomatoes, and mushrooms mingle with tangy feta cheese in this quick and easy dish for a summer night or anytime.





Original recipe yield: 4 servings.





INGREDIENTS:





1 (8 ounce) package ( 225 g ) penne pasta


2 tablespoons olive oil


1/2 cup chopped onion


1 clove garlic, minced


3 cups chopped tomatoes


1 cup sliced fresh mushrooms


4 cups chopped spinach leaves


salt and pepper to taste


1 pinch red pepper flakes


8 ounce feta cheese, crumbled





DIRECTIONS:


Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water until al dente; drain.


Meanwhile, heat olive oil in a large skillet over medium-high heat; add onion and garlic, and cook until golden brown. Mix in tomatoes, mushrooms, and spinach. Season with salt, pepper, and red pepper flakes. Cook 2 minutes more, until tomatoes are heated through and spinach is wilted. Reduce heat to medium, stir in pasta and feta cheese, and cook until heated through.
Try this quick one! Saute a bunch of small broccoli florets with thin sliced red onions in a smoking hot pan. Toss in some chopped garlic, salt and pepper towards the end of your saute. Add some cooked long pasta. ( I like angels hair or thin spaghetti)remove from heat and then toss in some crumbled feta. Lots of it! I add fresh spinach sometimes too! Start eating!!





Fashizzle!
Prepare linguini or fettucini as normal. In one quart sauce pan take two cups of pasteurized goats milk and 1/2 cup grated pecorino romano- sheep's milk only- place pot over medium flame or on a medium setting and stir constantly to prevent sticking. When mixture is thick, remove from stove. Prepare steamed broccoli or spinach and set aside. Prepare one head of garlic in olive oil;-either roast or microwave.Do not fry/saut茅- and place aside. Prepare chicken or by roasting and cut into strips. Place pasta on dish, then layer such as: spinach/ broccoli, chicken, garlic, alfredo sauce.

Mac and Cheese II

Yields: 4 servings


';Whip up a quick and easy white sauce with butter and flour, toss in Cheddar cheese and processed cheese and bake with macaroni for a deliciously creamy main dish for two or side dish for four.';


INGREDIENTS:


8 ounces elbow macaroni


2 tablespoons butter


1/4 cup all-purpose flour


2 cups milk





1 cup shredded Cheddar


cheese


8 ounces cubed


processed cheese food


DIRECTIONS:


1. In a large pot with boiling salted water cook elbow macaroni until al dente. Drain.


2. In a medium saucepan, over medium heat melt butter or margarine. Whisk flour and stir vigorously. Add milk and cook until thick and bubbly, about 5 to 7 minutes. Add cheeses and stir until completely melted.


3. In a large bowl mix together the drained pasta and cheese sauce mixture. Toss to coat evenly.


4. Pour into a greased 2 quart casserole dish. Bake in a preheated 350 degree F (175 degrees C) oven for 30 minutes. Let stand 10 minutes before serving.
