Easy dinner recipes for two?

My boyfriend and I are trying to learn to cook more. It is fun to cook together. I need some recipe ideas, cookbook or website recommendations for dinners for two. Most things we have made so far leave us leftovers for days!Easy dinner recipes for two?
Layered Mexican Casserole





鈥?1/2 pound ground beef


鈥?1 11 oz. can whole kernel corn, drained


鈥?1 1/2 cups salsa


鈥?1 cup cottage cheese


鈥?1 8 oz. container sour cream


鈥?5 cups tortilla chips, divided


鈥?1 1/2 cups shredded cheddar cheese, divided





鈥?Preheat oven to 350 degrees F. Brown meat in large skillet; drain. Add corn and salsa; mix well. Cook until heated through, stirring occasionally. Set aside. Mix cottage cheese and sour cream.





鈥?Layer 2 cups of the chips, 1/2 of the meat mixture, 3/4 cup of the cheddar cheese and 1/2 of the cottage cheese mixture in a 2-quart casserole dish. Repeat layers of chips, meat and cottage cheese.





鈥?Bake 35 minutes. Insert remaining chips around edge of casserole; top with remaining 3/4 cup cheddar cheese. Bake an additional 10 minutes or until cheese is melted.Easy dinner recipes for two?

MEAL FOR 1-2 PEOPLE





1-2 skinless chicken breasts


1-2 potatoes


Cut carrots for 1-2 people





Place each chicken breast on its own square piece of foil (big enough to cover chicken). Sprinkle basil, sage, pepper, thyme and marjoram on each chicken. Wrap foil over each chicken.


Wash and scrub whole potatoes. Wrap each potato in foil and insert potato metal stick into potato to ensure doneness.





Peel and cut carrots in bite-size pieces for 1-2 people. Place in foil square, sprinkle salt and pepper, then wrap foil around carrots. Place all foil wrapped pieces on the oven rack at 450 degrees for 45-50 minutes.





LINGUINI IN CLAM SAUCE FOR 2 PEOPLE





2 tbsp. onions


1 tbsp. garlic powder


1 tbsp. butter


1 tbsp. parsley


Salt and pepper


1 (6 1/2 oz.) cans minced clams





Saute onions in butter. Add garlic, parsley, salt and pepper. Add clams and broth. Fill can with water. Add heaping teaspoon cornstarch. Add to the clam sauce to thicken slightly. Cook enough linguini for 2 people. Serve with salad.





FRENCH TOAST - For 2 people





2 eggs


1/4 c. milk (approx.)


1/2 tsp. vanilla (approx.)


4 slices of bread


Bowl (cereal)


Plate

Preheat teflon griddle (medium-high) while combining ingredients. Mix eggs, milk and vanilla in a cereal bowl with a fork. Dip bread into goop. Then with a fork, flip or turn the slice of bread over so that both sides are saturated with the mixture. Place on hot griddle. Flip over when slightly brown before you smell a burnt odor. Once the second side is done place the French toast on the plate. Top with high calorie goop (butter, syrup, jams, jellies) if necessary.
If a recipe says it serves four, just halve all the ingredients. Or freeze the leftovers in portions, and use them as convenience meals when you don't feel like cooking. It also helps to figure out how much each of you actually needs beforehand (eg 100g each of pasta or 2 potatoes) and then only cook that amount.





I find the easiest recipes to modify for two are ones that have a separate starch and sauce component (like pasta, or curry and rice). Also, if you find a pot that's about the right size for just your two portions, then you'll know when you've put enough food in.





Try frying an onion, adding about 500g of chopped veggies, then putting in one tin of tomato and some herbs. Easy pasta sauce, and then you can put parmesan or crumbled feta on top.
Steaks or burgers on the grill.


Spaghetti.


Shrimp Scampi.


Tacos or burritos.


Baked fish.


';Breakfast'; for dinner...pancakes, french toast, etc.


Fried rice or stir fry.


Homemade Pizza.
