The easiest is quesadillas, with canned chilli inside and cheese on top. I also make heaps of omlettes, pancakes, sandwiches, soups. Those are all fairly cheap and easy!Looking for Cheap/Quick Dinner Recipes for two?
My favorite is 12 oz. of pasta shapes (not like spaghetti) and a tub of pesto. While you're tossing the pasta you can put some garlic bread (made from sandwich bread) in the broiler. That and a bag of salad. Total cost: Under $8. Which means only $4 per person.
Have you tried the Bertoli frozen pasta dishes? You can buy them at most grocery stores. They taste awesome. I wait until they're on sale and stock up. I've also found bigger sizes at Sam's Club.

If it's a very quick and simple thing, make omelletes. You can make them with chopped tomatoes and cilantro and chilis if you can handle that, so they'll be colorful as well as efficient and filling. Onions or mushrooms add texture, but don't do both or they'll clash. And I don't advise cheese, but if you like it then go ahead.





Pasta is always good. You can try pretty shapes to make it look fancier and all you have to do is boil, plus it goes best with water which means no expensive drinks. Make a simple, tomato-based sauce (no cream; that takes longer) and mix in meat or veggies depending on your taste. Also make some sort of salad--keep it simple, since you're on a budget; just chop some lettuce and tomatoes and cucumbers or, if that isn't to your taste, make a fruit salad! These are both very easy, but they'll feel elegant.





Avoid alcohol. That makes you hungrier and will wreck the cheap factor.
I love this pasta dish - it's fresh %26amp; healthy, easy %26amp; quick to make %26amp; super cheap! For another buck or two, you can add a fresh loaf of bread to eat along with it. You don't even have to cook this sauce - it's just tossed with hot pasta and served %26amp; it's really delicious!





Linguine with Fresh Tomato Sauce





2 cups seeded, and coarsely chopped tomato


1/2 cup extra virgin olive oil


1 cup firmly packed fresh basil leaves, minced


1 cup firmly packed fresh parsley leaves, minced


3 tablespoons freshly grated Parmesan


3 garlic cloves, or to taste, minced


2 teaspoons salt


1 pound linguine


Fresh parsley to garnish





Make tomato sauce:


In a bowl combine well all the sauce ingredients and let the sauce stand at room temperature, covered, for at least 1 hour.


In large pot, bring 5 quarts of salted water to a boil. Add linguine and stir to prevent sticking. Return water to boil and cook until pasta is firm but cooked, approximately 7 to 10 minutes, stirring occasionally. Drain pasta well. Serve with tomato sauce, and garnish with fresh parsley.
