Does anyone have some good dinner recipes for two elderly people? They don't eat a lot.?

I need easy to prepare meals that are well balanced and nutritional. I'm asking this question for a male friend who cooks for his invaled wife.Does anyone have some good dinner recipes for two elderly people? They don't eat a lot.?
I hope these help...they should be easliy adjusted for 2 servings if needed.





Hearty Italian Chicken Chowder





Makes: 2 servings





1/4 cup KRAFT LIGHT DONE RIGHT! Zesty Italian Reduced Fat Dressing


1/2 lb. boneless skinless chicken breast, chopped


1 can (14-1/2 oz.) stewed tomatoes, undrained


1 cup reduced sodium chicken broth


1 medium zucchini, chopped


1/2 cup elbow macaroni, uncooked


1 tsp. dried basil leaves


1/2 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese





HEAT dressing in large saucepan on medium heat. Add chicken; cook 3 min., stirring once.


ADD tomatoes, broth, zucchini, macaroni and basil. Bring to boil on high heat.


REDUCE heat to medium; simmer 8 min. or until macaroni is tender. Sprinkle with cheese.

STOVE TOP Classic One-Dish Chicken Bake with Vegetables





Makes: 6 servings, about 1-1/3 cups each





1-2/3 cups hot water


1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken


1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces


1 can (10-3/4 oz.) condensed cream of chicken soup


1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream


1-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese


1 bag (16 oz.) frozen mixed vegetables, thawed, drained





PREHEAT oven to 400掳F. Add hot water to stuffing mix; stir just until moistened. Set aside.


PLACE chicken in 13x9-inch baking dish. Mix soup, sour cream, cheese and vegetables; spoon over chicken. Top with prepared stuffing.


BAKE 30 min. or until chicken is cooked through (170掳F).

Creamy Chicken and Cheddar Rice





Makes: 4 servings





1 lb. boneless skinless chicken breasts, cut into strips


1 tsp. garlic powder


1 can (10-3/4 oz.) condensed cream of mushroom soup


1 soup can milk


1-1/2 cups MINUTE White Rice, uncooked


2 cups chopped fresh broccoli


1 cup KRAFT Shredded Cheddar Cheese





SPRAY nonstick skillet with cooking spray. Add chicken; cover. Cook 5 min. or until cooked through. Sprinkle with garlic powder.


ADD soup and milk. Bring to boil. Stir in rice and broccoli; cover. Reduce heat to low; simmer 5 min. or until rice is tender.


STIR in 1/2 cup of the cheese; sprinkle with remaining cheese.

Baked Monte Cristo Sandwich





Makes: 4 servings





8 slices 100% whole wheat bread


4 KRAFT 2% Milk Singles


24 slices OSCAR MAYER Shaved Smoked Ham


2 egg whites


1/2 cup fat free milk





PREHEAT oven to 450掳F. Top 4 of the bread slices with 2% Milk Singles, ham and remaining bread slices.


BEAT egg whites and milk in shallow dish or pie plate. Dip each sandwich into egg mixture, turning to coat both sides (let bread soak about 5 sec. on each side). Place sandwiches on baking sheet sprayed with cooking spray.


BAKE 6 min.; turn. Bake an additional 5 min. or until sandwiches are golden brown. Cut sandwiches diagonally in half.

Easy Turkey Wrap Sandwich





Makes: 1 serving





1 flour tortilla (6 inch)


2 tsp. KRAFT LIGHT DONE RIGHT! Ranch Reduced Fat Dressing


6 slices OSCAR MAYER Shaved Oven Roasted Turkey Breast


1 KRAFT DELI DELUXE 2% Milk Reduced Fat Swiss Deli Thin Cheese Slice


1 lettuce leaf


2 thin tomato slices





SPREAD tortilla with dressing.


TOP with turkey, cheese, lettuce and tomato; roll up.


SERVE immediately. Or, wrap tightly and refrigerate until ready to serve.


Make-Ahead


Sandwich can be stored, tightly wrapped, in refrigerator up to 12 hours.

Our Favorite Chicken Salad





Makes: 2 servings





1 cup shredded cooked chicken (3 oz.)


1/2 cup sliced celery


1 Tbsp. KRAFT Mayo Real Mayonnaise


1 Tbsp. BREAKSTONE'S or KNUDSEN Sour Cream





MIX chicken, celery, mayo and sour cream. Serve with TRISCUITS Crackers or on a sandwich roll.Does anyone have some good dinner recipes for two elderly people? They don't eat a lot.?
Take two chicken breasts, saute' them in about 2 Tblsp of butter and as much garlic as you like. Meanwhile bring your oven up to 350, Remove the chicken to another pan, place thermometer.





To pan add 1 cup dry white wine and 1 3/4 cup chicken broth. Reduce.... Season to taste, and serve chicken breasts over agelhair pasta'





Some shallots........wouldn't hurt.





Green veg and a bread, and you have a nutitious meal. Tasty too.
Any type of cassaroles or lasagna's that can easily be frozen, and then microwaved by them would be great!





Also, soups and chowders are perfect for freezing into individual containers for reheating! :o)
Chicken and rice





There are cooked chickens at the store that are great


to minimize cooking and prep.
CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
Tell him to go to Wal-Mart and purchase angel hair pasta, a jar of Ragu's Roasted Garlic Parmesan sauce, and a small bag of salad shrimp from the freezer section. The smallest bags are pretty cheap, and are enough for two people. Grill the shrimp in a little butter and seasoning salt. Boil the noodles and drain. Stir the sauce into the noodles while heating on very low. Serve with the shrimp either spooned on top or mixed in. This is very tasty, extremely easy to make, and perfect for a two-person meal.





Another good one:





You need white tortilla chips, some ground beef, taco seasoning, sour cream, lettuce, tomato, shredded cheese, and a can of Campbell's Nacho Cheese soup. Cook the ground beef and add taco seasoning. Spoon over the chips followed by the Nacho Cheese soup. (Heat that but do NOT add water, use as concentrate for cheese sauce.) Top with lettuce, diced tomatos, some shredded cheese, and a drop of sour cream. These nachos are absolutely delicious! And it is so easy to prepare. You just cook the meat and you're done. This is a perfect recipe for two people who don't eat a lot....use about 1/2 pound of beef or substitute diced chicken and that's really good too.

Thousand Island Dressing


Can of sauerkraut ( contains enough for several sandwiches)


Carl Buddig (Or is it Budding?) corned beef - 1 pkg per sandwich (we call it skinny meat- from the lunch meat section of your grocer)


Processed swiss cheese food slices (like American cheese slices) Taste the same but keeps longer in the fridge


(All ingredients are fairly inexpensive at WalMart)





Spread generous amount of dressing on bread. Add corned beef. Drain kraut and add a layer of it. Add one or two slices of cheese. Butter and grill over medium heat. Serve some canned or fresh fruit and you've covered all 4 food groups.





Also tell him to look for Hormel individual microwave entrees, they come in a wide variety and are very good. Cost about $2.00 each and don't need any refrigeration. They only take 90 seconds to microwave. They're also at WalMart and usually found near the Spaghetti O's and such.
My husband cooked for his invalid wife for 8 years until she died in '98. He cooked everything simple.


Eggs, grits and toast with bacon or sausage.


Meatloaf can either be frozen or used in sandwiches.


Any pasta or spaghetti


Spanish Rice


Baked fish with a microwave potato and salad or veggie.


Baked sweet potato with a slice of fried ham and a salad


bbq sandwich with chips and tea


Chicken sandwich with fruit and tea


Tuna or chicken salad with tomato and lettuce

Old people love Saltine Crackers and spray cheese in a can.
This is very easy to make and taste delicious! I like to serve mine with mixed veggies





Chicken Parmesan


Serves 6





1/3 CupParmesan cheese, grated


1/4 TspItalian Seasoning, crushed


6 (4 oz) Chicken Breast, boneless, skinless


1 TbspUnsalted Butter


1/2 CupWhite Onion, diced


1 Tbsp All-Purpose Flour


1/2 Cup2% Milk


1 (1 oz packet) Ranch Flavored Salad Dressing Mix


6 Slices Mozzarella Cheese


1/2 (10 oz pkg.) Spinach, frozen, thawed, drained


1 Tbsp Pimiento, chopped





Instructions:


Preheat the oven to 350潞F





In a small mixing bowl combine cheese, ranch salad dressing mix, and Italian seasoning. Roll chicken pieces in cheese mixture to coat lightly; set remaining cheese mixture aside. Arrange the pieces in an 8x8x2-inch baking dish. In a small saucepan cook onion in hot margarine until tender.





Stir in flour; and remaining parmesan cheese mixture: add milk all at once. Cook and stir till bubbly; stir in drained spinach and pimiento. Place a slice of cheese and spoon the spinach mixture over the chicken; sprinkle with remaining cheese mixture. Bake, uncovered, for 30-35 minutes or until tender.
