What is your best homemade recipe for a romantic dinner for two?

Warm Arugula with Mozzarella and Balsamic Vinaigrette


(makes 2 servings)


2 tablespoons minced shallots


1 teaspoon minced garlic


1/2 teaspoon finely chopped fresh thyme


1 tablespoon finely chopped flat-leaf parsley


2 teaspoons balsamic vinegar


2 teaspoons olive oil


freshly ground pepper


8 ounces fresh arugula, leaves and tender stems, well washed and drained


3 tablespoons shredded low-fat mozzarella cheese





In a large stainless steel mixing bowl, combine the shallots, garlic, thyme, parsley, balsamic vinegar, and olive oil. Whisk for 30 seconds. Season to taste with pepper.


Place the bowl on the stove over low heat. When the mixture begins to sizzle, add the arugula and mozzarella and using metal tongs, constantly stir the mixture (be careful to not bruise the leaves), until the cheese melts and the mixture is thoroughly combined. When the arugula is warm, remove from heat and divide onto 2 large plates.








Chicken with Fennel St. Tropez





1 medium fennel bulb, about 1 pound, trimmed


olive oil cooking spray


2 large plum tomatoes, seeded and diced


6 ounces pearl onions, peeled and cut in half


8 ounces white button mushrooms halved or quartered


1/4 cup dry white wine


1 tablespoon grated orange zest


2 teaspoons balsamic vinegar


1/8 teaspoon red pepper flakes


4 bone-in chicken thighs, about 1 1/4 pounds total


1 teaspoon fresh thyme leaves


chopped fresh parsley for garnish (optional)


fresh sprigs of thyme for garnish (optional)








Cut the fennel bulb in half lengthwise. Cut each half into 4 wedges.


Lightly coat a large nonstick skillet with lid with the cooking spray. Add the tomatoes, onions, mushrooms, wine, orange zest, vinegar, and red pepper flakes. Cook over medium heat, stirring occasionally, until mixture comes to a boil. Reduce heat to medium low.


Meanwhile, remove the skin and all visible fat from the chicken thighs. Rinse and pat dry. Arrange the chicken thighs and fennel on top of the tomato mixture, and sprinkle with thyme. Cover and cook until chicken is cooked through and fennel is tender, about 25 to 30 minutes. Using a slotted spoon, transfer the chicken and vegetables to heated individual plates or to one large serving dish.


Increase heat to high and cook, stirring occasionally, until the remaining sauce in the skillet has thickened, about 5 minutes. Spoon the sauce over the chicken and vegetables. If using, garnish with parsley and sprigs of fresh thyme. Serve hot.








Chocolate-Dipped Strawberries





6 large ripe strawberries, preferably with long stems attached


3 tablespoons semi-sweet chocolate chips





Line a baking sheet with waxed paper. Rinse the berries and pat dry with paper towels.


In a small microwave-safe bowl, microwave the chocolate chips on 50% (medium) power for 1 to 1 1/2 minutes. Stir until smooth (if not completely melted, microwave a few seconds longer). Or melt the chocolate according to package directions.


Holding a strawberry by the stem, dip into the chocolate to cover about half of the berry. Lay on the prepared baking sheet. Repeat until all strawberries are coated. Chill until set.

My husband always gets in the mood when I made Phyllo-Wrapped Salmon with Marsala Wine Sauce. The food is great, but just looking at the outcome is amazing. It's not too hard to do either.

I think of food that you can share as being part of the romantic aspect. Try a yummy wienerschnitzel ala holstein with some buttery noodles.





2 nice chubby veal cutlets


1/4 cup all-purpose flour


2 tablespoons grated Parmesan cheese


1 egg


1 teaspoon minced parsley


1/4 teaspoon salt


1/4 teaspoon pepper


1 pinch ground nutmeg


1 tablespoons milk


1/2 cup dry bread crumbs


6 tablespoons butter


4 slices lemon





2 eggs





1/2 package wide egg noodles


Butter


Juice of 1/2 lemon





Place each veal cutlet between two pieces of plastic wrap, and pound with the flat side of a meat mallet until about 1/4 inch thick. Dip in flour to coat.





In a medium bowl, stir together the Parmesan cheese, eggs, parsley, salt, pepper, nutmeg and milk. Place bread crumbs on a plate. Dip each cutlet into the egg mixture, then press in the bread crumbs to coat. Place coated cutlets on a plate and refrigerate for 1 hour or overnight.





Cook pasta in boiling, salted water while the cutlets are cooking.





Melt butter in a large skillet over medium heat. Cook the breaded cutlets until browned on each side, about 3 minutes per side.





Drain pasta. pasta on serving platter, then put cutlets over top.





Fry 2 eggs in pan drippings, then place over the cutlets (the broken yolk becomes part of the ';glaze';).





Stir in remaining butter and lemon juice into pan drippings and stir, add in a smidge of whatever wine you'll have with dinner if desired. Pour the pan juices over the cutlets and noodles. Garnish with lemon slices and a little parsley.





Serve with a good German or Austrian white wine like a Riessling or Liebfraumilch.

Crockpot Caramel Rice Pudding





3 cups cooked white rice


1/2 cup raisins


1 tsp. vanilla


14 oz. can sweetened condensed milk


12 oz. can evaporated milk


2 Tbsp. sugar


1/4 tsp. salt


1/2 tsp. ground cinnamon


Spray inside of 3 quart crockpot with nonstick cooking spray. Combine


all ingredients in crockpot. Cover and cook on low for 3-4 hrs or until


liquid is absorbed and mixture is thickened. Stir well. Serve warm.


Serves 8.
I like SORBET. mix peaches or strawberries, or cranberries any fruit you like with sugar and water. Then you just put it in the FREEZER to ice it. It is like a ice cream! That is for desert.


But for the main dish ITALIAN food is the best! Spaghetti, or pizza, but spaghetti is better, like in movies eat from the same bowl and ';accidentally'; eat the same paste until you accidentally kiss your spouse
