chicken and mushroom saute

* 2 skinless, boneless chicken breast halves - pounded thin

* 1/4 cup all-purpose flour

* salt and ground black pepper to taste

* 2 teaspoons butter

* 2 teaspoons vegetable oil

* 1 (4.5 ounce) can mushrooms, drained

* 1 cup water

* 1 packet chicken bouillon granules

* 1 teaspoon cornstarch

* 1/2 teaspoon dried parsley

* 1/4 teaspoon garlic powder

* ground black pepper to taste

1. Season flour with salt and pepper. Dredge chicken in seasoned flour onto a sheet of wax paper. In a nonstick skillet, combine the vegetable oil and butter or margarine and heat over medium high heat until bubbly and hot. Add chicken and cook until lightly browned on both sides and cooked through, 3 to 4 minutes. Remove chicken and set aside.

2. To the same skillet, add the mushrooms and saute for about 5 minutes. Combine the water, broth mix, cornstarch, parsley, garlic powder, salt and pepper and add to the skillet. Cook, stirring frequently, until liquid is thickened, 1 to 2 minutes.

3. Return chicken to the skillet and cook until chicken is heated through, 1 to 2 minutes. Serve.

other ideas: you could make breakfast for dinner, grilled ham and cheese, some kind of soup (it would freeze well)I need a recipe for two?
Strogonoff

- 4 garlic

- 1 onion

- 500 gr of chicken breast

- 300g heavy whipping cream (not sweet)

- Champignon (as many as you want)

- Ketchup (3 soup spoons)

- Mustard (1 tea spoon)

- Salt

- pepper

- butter (1 soup spoon)

Gild the garlic and onion with butter, then add the chicken, salt and pepper. When the chicken gets gild, add everythng else but the champignon. After the chicken is cooked, put the champignons and cook for more 5 minutes. Its delicious with shoestring potato!!
Why don't you cook a whole chicken. Just roast a salt and peppered bird in the oven for 45-60 min depending on the size of the chicken. From there you can make so many simple dinners. Tacos, burritos. salads, toss the meat in with pasta, use it to top a pizza (buy a pre-made pizza crust), sandwiches, etc...The chicken will stay good for 5 days or more so you can use it all week and once you have all of that cooked meat you have the hard part done!
You need to check out Homemade Gourmet. I love it!! (so much I started selling it) The whole concept is to add just a few ingredients (found in your pantry) to prepackaged seasonings/mixes. Because I work full time it was a complete time saver! Affordable too.

Good Luck!!
Stuffed peppers. Just buy 2 whole green bell peppers and cut the top off and steam them a little bit. Fill them with white rice stirred with salsa, corn, and beans. Simple no?

if you cant steam them then you could grill them or just throw them in the oven for a little while
